Ingredients
- 4 boneless skinless chicken breasts (6-7 oz each)
- 3 tbsp olive oil
Juice and zest of 1 lemon
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp smoked paprika
- Salt and pepper
Directions
Preheat oven to 425°F.
- Pound chicken to even thickness (about 3/4 inch) — this is the secret to juicy chicken.
- Mix olive oil, lemon zest, lemon juice, garlic, and all herbs and spices.
- Coat chicken thoroughly. Let sit 15 minutes or refrigerate overnight.
- Bake on a parchment-lined sheet 18-22 minutes until internal temp is 165°F.
- Rest 5 minutes before slicing.
Notes
Pounding to even thickness ensures the thin end doesn’t dry out before the thick end is cooked. This is the single most important technique for juicy chicken breast.
