Ingredients

Ingredients (Filling)

  • 2 Tbsp Olive Oil
  • 1.5 Pounds Ground Lamb (or Beef if you must)
  • 1 Large Carrot (grated)
  • 1 Large Onion (grated)
  • Fresh Rosemary
  • Fresh Thyme
  • Minced Garlic (I use 4 cloves)
  • Salt
  • Pepper
  • Worcestershire Sauce (several splashes)
  • Tomato Puree or Paste (no more than a small can)

Red Wine (several glugs)

  • 1/4 Cup Chicken Stock (more or less)

Ingredients (Mash)

  • 1.5 Pounds Golden Potatoes
  • 1/4 Cup Heavy Cream
  • 3.5 Tbsp Butter
  • Salt

Pepper

  • 2 Egg Yolks
  • 1/4 Cup Parmesan Cheese (more if needed)
  • Smoked Paprika

Ingredients (Crust)

  • 24 Buttermilk Biscuits dough balls (homemade or store bought tube)

Directions

  1. Preparation (Initial):
  2. Dice the garlic
  3. Separate your herbs from the stems
  4. Separate your Egg Yolks
  5. Peel and Slice your potatoes into even pieces
  6. Open your wine if it’s not already
  7. Taste the wine
  8. Grate Carrot and Onion
  9. Grease 2 muffin tins (24 muffins)
  10. Preheat oven to 375 degrees F
  11. Preparation (Potatoes):
  12. Bring some salted water to boil in a large pot
  13. Cook the potatoes

Mash or rice (i prefer to rice) the potatoes

  1. Allow to cool a bit so as not to cook the egg yolks
  2. Mix in the Mash ingredients
  3. Preparation (Filling):
  4. Heat a large frying pan and pour in olive oil

Add meat and stir constantly to break it all up

  1. Once meta is broken up and brown add garlic and spices

Add grated carrot and onion

  1. Cook and stir until vegetables start to mash into meat
  2. When filling is a nice minced consistency add Worcestershire sauce
  3. Stir in Tomato puree and wine and let cook down for a minute or so
  4. Add the chicken stock and cook down until desired consistency

Preparation (Assembly)

  1. Press a piece of the buttermilk biscuit dough into the bottom and up the sides of each greased muffin cup.
  2. Scoop filling into each cup leaving a little room on top for the mash
  3. Spread or pipe mash over the top of each pie.
  4. Sprinkle each with a generous portion of Parmesan

Sprinkle with smoked paprika.

  1. Bake in a 375 degree F oven or until mash gets golden brown
  2. Enjoy!
