Ingredients
- 2 large heads broccoli, cut into florets
- 4 cloves garlic, thinly sliced
- 3 tbsp olive oil
- 1 lemon (zested and juiced)
- 1/4 tsp red pepper flakes
- Salt and pepper
- Grated Parmesan (optional)
Directions
- Preheat oven to 425°F. Broccoli must be completely dry for roasting.
- Toss broccoli and garlic with olive oil, salt, pepper, and red pepper flakes.
- Spread in a single layer on a baking sheet — do not crowd.
- Roast 18-22 minutes until edges are crispy and browned.
- Transfer to a bowl. Toss with lemon zest, lemon juice, and Parmesan if using.
Notes
The browning is flavor. Don’t be afraid of color on roasted vegetables. A single layer is essential — overcrowding causes steaming.
