Salmon Cucumber Bites

An elegant no-cook appetizer or snack. Nearly zero carbs with high protein.

Ingredients

  • 4 oz smoked salmon, cut into small pieces
  • 1 large English cucumber, sliced into 1/2-inch rounds
  • 4 oz cream cheese, softened
  • 1 tbsp fresh dill
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • Everything bagel seasoning
  • Capers to garnish

Directions

  1. Mix cream cheese with dill, lemon juice, and lemon zest until smooth.

Arrange cucumber rounds on a serving platter.

  1. Top each round with a small dollop of cream cheese mixture.

Lay a piece of smoked salmon on top.

  1. Garnish with capers and a sprinkle of everything bagel seasoning.
  2. Serve immediately.

Notes

Use reduced-fat cream cheese to cut calories further. These can be assembled up to 2 hours ahead — store covered in the fridge.
