An elegant no-cook appetizer or snack. Nearly zero carbs with high protein.
Ingredients
- 4 oz smoked salmon, cut into small pieces
- 1 large English cucumber, sliced into 1/2-inch rounds
- 4 oz cream cheese, softened
- 1 tbsp fresh dill
- 1 tsp lemon juice
- 1 tsp lemon zest
- Everything bagel seasoning
- Capers to garnish
Directions
- Mix cream cheese with dill, lemon juice, and lemon zest until smooth.
Arrange cucumber rounds on a serving platter.
- Top each round with a small dollop of cream cheese mixture.
Lay a piece of smoked salmon on top.
- Garnish with capers and a sprinkle of everything bagel seasoning.
- Serve immediately.
Notes
Use reduced-fat cream cheese to cut calories further. These can be assembled up to 2 hours ahead — store covered in the fridge.
