Shirataki noodles have essentially zero carbs or calories, making this a true diabetic-friendly stir-fry.
Ingredients
- 2 packages (7 oz each) shirataki noodles
- 2 cups broccoli florets
- 1 cup snap peas
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 1 tsp fresh ginger
- Sauce: 3 tbsp low-sodium soy sauce, 1 tbsp oyster sauce (or vegetarian oyster sauce), 1 tsp sesame oil, 1 tsp rice vinegar
- 1 tbsp vegetable oil
- Sesame seeds
Directions
- Prepare shirataki noodles: rinse very well under cold water, then boil 2 minutes. Drain and dry-fry in a hot skillet 2-3 minutes to remove moisture.
- Heat oil in a wok over high heat. Stir-fry broccoli and snap peas 3-4 minutes.
- Add garlic, ginger, and bell pepper. Cook 1-2 minutes.
- Add prepared shirataki noodles. Toss everything together.
- Pour sauce over and toss well. Cook 1-2 more minutes.
- Serve topped with sesame seeds.
Notes
Rinsing and dry-frying shirataki noodles is essential — they have a slightly fishy smell straight from the package that disappears completely with this treatment.
