Slow Cooker Turkey and Vegetable Soup

Set it in the morning, come home to a complete, nutritious meal.
Ingredients
- 1.5 lbs ground turkey, browned
- 4 cups low-sodium chicken broth
- 2 cups diced tomatoes
- 2 carrots, sliced
- 2 stalks celery, sliced
- 1 zucchini, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup green beans
- 1 tsp Italian seasoning
- 1 tsp dried thyme
Salt and pepper
- 2 cups baby spinach (add last 30 min)
Directions
- Brown ground turkey in a skillet, breaking apart. Drain fat.
- Add all ingredients except spinach to slow cooker. Stir to combine.
Cook on LOW 6-8 hours or HIGH 3-4 hours.
- Add spinach in the last 30 minutes. Season with salt and pepper.
- Serve with crusty bread or as-is.
Notes
This freezes perfectly in individual portions. A great Sunday prep for easy weekday lunches.
