Steak and Vegetable Kabobs

Colorful, fun, and naturally portion-controlled. Great for summer grilling.
Ingredients
- 1.5 lbs sirloin steak, cut into 1.5-inch cubes
- 1 red bell pepper, cut into squares
- 1 green bell pepper, cut into squares
- 1 large red onion, cut into wedges
- 1 cup cherry tomatoes
- 1 zucchini, sliced thick
- Marinade: 3 tbsp olive oil, 2 tbsp soy sauce, 1 tbsp lemon juice, 2 cloves garlic minced, 1 tsp thyme, salt and pepper
Directions
- Marinate steak in marinade for at least 1 hour or overnight.
Soak wooden skewers in water 30 minutes if using.
- Thread steak, peppers, onion, tomatoes, and zucchini alternately onto skewers.
- Grill over high heat 4-5 minutes per side for medium doneness, basting with marinade.
- Rest 3 minutes before serving.
Notes
Cut vegetables larger than you think — they shrink on the grill. Keep similar-sized pieces on each skewer for even cooking.
