Lean turkey with fiber-packed black beans makes one of the most blood-sugar friendly chilis around.
Ingredients
- 1.5 lbs 93% lean ground turkey
- 2 cans (15 oz each) black beans, rinsed
- 1 can (28 oz) crushed tomatoes
- 1 can (14 oz) diced tomatoes with chiles
- 1 large onion, diced
- 1 bell pepper, diced
- 4 cloves garlic, minced
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/4 tsp cayenne
- 1 tbsp olive oil
- Salt and pepper
- Toppings: Greek yogurt, avocado, cilantro
Directions
- Heat oil in a Dutch oven over medium-high heat. Brown turkey, breaking apart, 7-8 min.
- Add onion and bell pepper. Cook 4 minutes. Add garlic and all spices; toast 1 minute.
- Add black beans, crushed tomatoes, and diced tomatoes. Stir well.
- Bring to a boil then reduce to a simmer. Cook uncovered 25 minutes, stirring occasionally.
- Season with salt and pepper. Serve with Greek yogurt and avocado in place of sour cream.
Notes
Improves dramatically overnight. Make Sunday for the whole week. Freezes perfectly for 3 months.
