Lean turkey with fiber-packed black beans makes one of the most blood-sugar friendly chilis around.

Ingredients

  • 1.5 lbs 93% lean ground turkey
  • 2 cans (15 oz each) black beans, rinsed
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes with chiles
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 4 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne
  • 1 tbsp olive oil
  • Salt and pepper
  • Toppings: Greek yogurt, avocado, cilantro

Directions

  1. Heat oil in a Dutch oven over medium-high heat. Brown turkey, breaking apart, 7-8 min.
  2. Add onion and bell pepper. Cook 4 minutes. Add garlic and all spices; toast 1 minute.
  3. Add black beans, crushed tomatoes, and diced tomatoes. Stir well.
  4. Bring to a boil then reduce to a simmer. Cook uncovered 25 minutes, stirring occasionally.
  5. Season with salt and pepper. Serve with Greek yogurt and avocado in place of sour cream.

Notes

Improves dramatically overnight. Make Sunday for the whole week. Freezes perfectly for 3 months.
