Turkey and Spinach Stuffed Mushrooms

Ingredients
- 16 large cremini or baby bella mushrooms, stems removed
- 1/2 lb 93% lean ground turkey
- 2 cups fresh spinach, wilted and chopped
- 2 oz cream cheese, softened
- 1/4 cup grated Parmesan
- 2 cloves garlic, minced
- 1/4 tsp Italian seasoning
- Salt and pepper
- Extra Parmesan for topping
Directions
- Preheat oven to 400°F. Brush mushroom caps with olive oil, season with salt and pepper.
- Cook turkey in a skillet, breaking apart. Add garlic and cook 1 minute.
- Mix turkey with spinach, cream cheese, Parmesan, and Italian seasoning.
- Fill each mushroom cap generously with turkey mixture. Top with extra Parmesan.
- Bake 18-20 minutes until mushrooms are tender and tops are golden.
Notes
Remove stems and use a small spoon to scrape out a bit of the inside to create more room for filling.
