Turkey and Spinach Stuffed Mushrooms

Elegant appetizer or light meal. Low carb, high protein, and impressive for guests.

Ingredients

  • 16 large cremini or baby bella mushrooms, stems removed
  • 1/2 lb 93% lean ground turkey
  • 2 cups fresh spinach, wilted and chopped
  • 2 oz cream cheese, softened
  • 1/4 cup grated Parmesan
  • 2 cloves garlic, minced
  • 1/4 tsp Italian seasoning
  • Salt and pepper
  • Extra Parmesan for topping

Directions

  1. Preheat oven to 400°F. Brush mushroom caps with olive oil, season with salt and pepper.
  2. Cook turkey in a skillet, breaking apart. Add garlic and cook 1 minute.
  3. Mix turkey with spinach, cream cheese, Parmesan, and Italian seasoning.
  4. Fill each mushroom cap generously with turkey mixture. Top with extra Parmesan.
  5. Bake 18-20 minutes until mushrooms are tender and tops are golden.

Notes

Remove stems and use a small spoon to scrape out a bit of the inside to create more room for filling.
