Turkey Meatballs with Zucchini Noodles

Comfort food without the blood sugar spike. The meatballs can be made in big batches and frozen.
Ingredients
- 7 oz 93% lean ground turkey (for meatballs)
- 1 egg, beaten
- 2 tbsp grated Parmesan
- 1 tsp Italian seasoning
- 2 cloves garlic, minced
- 2 medium zucchini, spiralized
- 1 can (25 oz) marinara sauce (no added sugar — check label)
- Salt, pepper, red pepper flakes
Directions
- Combine turkey, egg, Parmesan, Italian seasoning, garlic, salt, and pepper. Form into 12–14 meatballs.
- Heat oven to 400°F or pan-fry meatballs in 1 tbsp olive oil, 3–4 min per side until browned.
- Transfer to oven-safe pan, pour marinara over meatballs, bake 15 minutes.
- While meatballs bake, sauté zucchini noodles over high heat 2–3 minutes.
- Plate zucchini, top with meatballs and sauce, garnish with Parmesan.
Notes
Meatballs freeze beautifully — make a 4× batch, bake all of them, and freeze in portions with sauce. A complete dinner from frozen takes 8 minutes in the microwave.
