Za’atar and olive oil create one of the most aromatic and satisfying chicken preparations in Mediterranean cuisine.
Ingredients
- 1.5 lbs boneless chicken thighs or breasts
- Za’atar spice blend: 2 tbsp dried thyme, 1 tbsp sumac, 1 tbsp sesame seeds, 1/2 tsp salt, 1/4 tsp cumin (or use store-bought)
- 3 tbsp olive oil
- 2 cloves garlic, minced
- Salt and pepper
- Lemon wedges
Directions
Mix za’atar with olive oil and garlic.
- Coat chicken thoroughly with za’atar mixture. Marinate 30 min or up to overnight.
Preheat oven to 425°F or heat a grill.
- Roast or grill chicken 12-15 min per side until cooked through and fragrant.
- Rest 5 min. Serve with lemon.

Za’atar is one of the most beneficial spice blends in Mediterranean cooking — thyme, sumac, and sesame provide antioxidants, vitamin C, and healthy fats respectively.
