A complete plant-based burrito bowl that delivers 20g protein without any meat.
Ingredients
- 2 cans (15 oz each) black or pinto beans, rinsed
- 2 cups cauliflower rice or brown rice
- 1 cup corn
- 1 cup salsa
- 2 avocados, sliced
- 1/2 red onion, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro
- Juice of 2 limes
- Cumin, chili powder, salt to season beans
Directions
- Warm beans in a small saucepan with cumin, chili powder, and a pinch of salt.
- Prepare cauliflower rice (microwave or sauté 5 minutes) and season with lime.
- Build bowls: rice base, then beans, corn, salsa, tomatoes, and red onion.
- Arrange avocado slices on top. Squeeze lime generously.
- Top with cilantro.
Notes
Black beans + corn together create a nearly complete protein profile. Add Greek yogurt as a sour cream substitute for additional protein.
