Onsen Tamago

The egg that runs backwards. A normal soft-boiled egg has a set white and a runny yolk; onsen tamago has the OPPOSITE - a set custardy yolk and a barely-set slippery white. The reason is beautiful: the yolk sets at a LOWER temperature (~65-70 C) than the white (~80 C). Hold an egg at hot-spring temperature and you land in the gap. It is not a timing trick - it is a holding temperature.

  • 4 eggs, in the shell, straight from the fridge
  • Tsuyu (the sauce)
  • 120 ml dashi
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • Sliced spring onion and katsuobushi, to serve

  1. Sous-vide method (easy, and the right tool): set a circulator to 68 C / 154 F and cook the eggs, in the shell, for 45 minutes. That’s it. You are not timing a transfer - you are holding a temperature until the egg equilibrates.
  2. Stovetop method (fiddly but works): bring 1 litre of water to a boil, kill the heat, add 200 ml cold water to drop it to roughly 68-70 C. Add the eggs, cover, and leave 17-20 minutes. Use a thermometer - the whole dish is the temperature.
  3. Make the tsuyu: warm the dashi, soy and mirin together, then cool.
  4. Crack each egg into a small bowl. The white will be loose and cloudy and the yolk will hold its shape - that is correct, not a failure.
  5. Pour the cool tsuyu around it, top with spring onion and katsuobushi.

The science - why this works at all

Hold at 65-70 C and the yolk sets while the white’s majority protein (ovalbumin) never reaches its temperature. You get the inverse egg.

Which means the normal soft-boiled egg is the weird one. A soft-boiled egg only exists because you DIDN’T wait - it is a gradient artifact caught mid-transfer. The onsen egg is what an egg actually wants to be at equilibrium. Boiling lies to you; the hot spring tells the truth.

⚠ The origin story is folklore

The ‘300-year-old traveler discovered it in a hot spring’ tale is everywhere. Japanese sources say 諸説 (various theories) - the origin is NOT established. The only hard anchor found is 飯坂温泉’s ~1920 ラジウム玉子 (‘radium egg’), and that is single-sourced.

⚠ A conflation nobody addresses

Beppu’s 地獄蒸し (‘hell steaming’) is ~100 C STEAM. That produces a HARD-COOKED egg, not a 65-70 C onsen tamago. They get lumped together in write-ups about ‘eggs cooked in hot springs’ as if they were one tradition. They are two different foods made by two different physics.
