Spiced Lentil Patties

A satisfying plant-based burger alternative that’s high in protein and fiber.
Ingredients
- 1.5 cups green or brown lentils, cooked and partially mashed
- 1/2 cup rolled oats or breadcrumbs
- 1 egg (or flax egg for vegan)
- 1/2 onion, finely grated
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp coriander
- 1/4 tsp cayenne
- 2 tbsp fresh parsley
- Salt and pepper
- Olive oil for cooking
Directions
- Combine all ingredients. Mix well. Refrigerate 20 minutes to firm up.
Form into 8 patties about 1/2 inch thick.
- Heat oil in a skillet over medium heat. Cook patties 4-5 minutes per side until golden.
- Serve in lettuce cups or on a salad. Top with tzatziki or tahini sauce.
Notes
Refrigerating the mixture is essential — it makes the patties hold together much better during cooking. These freeze well before or after cooking.
