What it is
Baking soda is pure sodium bicarbonate (NaHCO₃), a single alkaline compound. Baking powder is a pre-mixed leavening kit: baking soda plus one or more powdered acids (commonly cream of tartar and/or sodium aluminum sulfate or monocalcium phosphate) plus a little cornstarch to keep it dry and prevent the acid and base from reacting in the can. Both work the same way in the end — an acid-base reaction releases carbon dioxide gas that inflates bubbles in a batter, and heat sets the structure around them. The difference is where the acid comes from. Baking soda is a base with no acid of its own, so it can only leaven if the recipe supplies one; baking powder already contains its acid, so it leavens any batter you stir it into. Confusing the two is the single most common baking mistake, which is exactly why this page covers both together.
History & origin
Before chemical leaveners, bakers relied on yeast, eggs, or hard-beaten air, and quick breads as we know them didn’t exist. Potash (leached from wood ash) and then pearlash were early alkaline leaveners in the 1700s. Purified sodium bicarbonate arrived in the 1840s — the American firm that became Arm & Hammer made it a household staple — but on its own it left a soapy, bitter taste unless there was acid in the batter. The breakthrough was baking powder: in the 1860s, chemists (Britain’s Alfred Bird, and in America Eben Horsford, who co-founded Rumford) packaged the base together with a dry acid and a starch buffer, so cooks no longer had to guarantee an acidic ingredient. Later “double-acting” formulas added a second, heat-triggered acid so a batter could sit briefly without deflating — the standard can on the shelf today.
Where it comes from today
Baking soda is manufactured at industrial scale, either mined as the mineral nahcolite / trona (a huge deposit sits under Wyoming) or produced through the Solvay process, then purified to a consistent fine powder — Arm & Hammer is the iconic US brand, and every box is essentially the same pure sodium bicarbonate. Baking powder is a blended product: Clabber Girl, Rumford, and Davis are the familiar American cans, and the meaningful choice among them is whether they’re aluminum-based (sodium aluminum sulfate, which some people detect as a faint metallic bitterness) or aluminum-free (Rumford is the well-known aluminum-free option, using monocalcium phosphate). Nearly all supermarket baking powder is now “double-acting” — it reacts a little when it first gets wet and then again in the oven’s heat, which is the property that lets muffin batter wait a few minutes without collapsing.
How it’s used today
The rule of thumb: use baking soda when your recipe already has a distinct acidic ingredient, and baking powder when it doesn’t. Baking soda pairs with Buttermilk, yogurt, sour cream, Molasses, brown sugar, natural cocoa, vinegar, lemon juice, or honey — the acid neutralizes the soda and generates the CO₂. Because soda is far more concentrated (about 3–4× stronger than powder), you need only a little; too much leaves an unmistakable soapy, metallic, bitter aftertaste and can turn the crumb yellowish and coarse. Baking powder is the default for cakes, biscuits, pancakes, and quick breads built on neutral dairy like plain milk. Bakers also exploit baking soda’s alkalinity for browning and texture that has nothing to do with rise — a pinch makes cookies spread and brown deeper (via the Maillard reaction), keeps green vegetables vivid, tenderizes ground meat, and speeds caramelizing onions. Crucially, the two are not swaps: a spoon of baking soda is not a spoon of baking powder, and vice versa.
Make your own
You can’t make baking soda in a kitchen — it’s a mined or industrially produced mineral — but you can make baking powder from it, which is genuinely useful when you run out. Baking powder is just baking soda plus a dry acid plus a starch buffer, so combine 1 part baking soda with 2 parts cream of tartar (and optionally 1 part Cornstarch to keep it from clumping and reacting early). In practice, to replace 1 teaspoon of baking powder, mix ¼ teaspoon baking soda with ½ teaspoon cream of tartar — that’s the classic single-acting formula. Mix only what you’ll use soon, since homemade powder is single-acting and starts working the moment it’s wet, so get the batter into the oven promptly. Two quick freshness tests worth knowing: drop baking soda into vinegar and it should fizz vigorously; stir baking powder into hot water and it should bubble. Flat fizz means dead leavener — replace it, because stale powder is the silent cause of a cake that just won’t rise.
Substitutes (if absolutely necessary)
- To replace baking powder with baking soda: for each 1 tsp of baking powder, use ¼ tsp baking soda PLUS an acidic ingredient already in the recipe (½ tsp cream of tartar, or swap some liquid for Buttermilk, yogurt, or a splash of vinegar/lemon).
- To make baking powder from scratch: 1 part baking soda + 2 parts cream of tartar (add 1 part Cornstarch to keep it dry). For 1 tsp powder: ¼ tsp soda + ½ tsp cream of tartar.
- To replace baking soda with baking powder: possible but clumsy — you need about 3–4× as much powder, which throws off the salt/acid balance and can taste off; better to keep soda on hand.
- They are NOT one-for-one — swapping equal spoonfuls is the classic wreck: too much soda tastes soapy and metallic; too little powder means no rise.

- Local store: both live in the baking aisle in near-identical cans — read the label, they are easy to grab by mistake. Arm & Hammer is the standard baking soda; Clabber Girl, Rumford, and Davis are common baking powders.
