Salt

Sodium chloride — the one seasoning almost every recipe assumes and the only mineral we eat as a rock. It draws out water, tames bitterness, deepens sweetness, and makes food taste more like itself; used well, it is invisible, and used carelessly it is the difference between a dish and a disaster.

What it is

Salt is sodium chloride (NaCl), a crystalline mineral that is roughly 40% sodium and 60% chloride by weight. It is the only rock humans eat directly, and biologically we can’t live without it — sodium runs nerve signals and fluid balance, which is why our tongues have dedicated salt receptors and why food tastes flat without it. In the kitchen it does far more than “make things salty”: it suppresses bitterness, heightens perceived sweetness and aroma, firms up gluten, draws water out of meat and vegetables (the basis of curing, brining, and koshering), and, in fermentation, holds back spoilage microbes while the ones you want get to work. The single most important cooking fact about salt is that brands differ enormously by VOLUME. A tablespoon of one salt can be nearly twice as salty as a tablespoon of another, because the crystals are shaped and packed differently — so “a teaspoon of salt” is one of the least reliable measurements in any recipe.

History & origin

Salt is one of the oldest and most fought-over commodities on earth. Because it was the primary way to preserve food before refrigeration — salted fish, cured pork, brined vegetables — whole economies and trade routes were built on it. Roman soldiers were partly paid in it (the word salary descends from Latin sal, and “worth his salt” is a fossil of that), the Saharan caravan trade ran salt south and gold north, and Gandhi’s 1930 Salt March protested a British tax on a substance no one could do without. It has been panned from seawater, mined from ancient dried seabeds, and boiled from brine springs for millennia. Only in the modern era, once it became cheap and universal, did salt lose its status as treasure and become the thing we take for granted in the cupboard.

Where it comes from today

Nearly all salt still comes from just two sources: evaporated seawater (or brine) and mined rock salt from the buried remains of ancient seas. Table salt is heavily refined to nearly pure NaCl, ground fine, and usually treated with anti-caking agents and often iodine — iodized salt was a 1920s public-health triumph that all but eliminated goiter. Kosher salt is coarse and flaky; despite the name it isn’t “more kosher” — it’s named for koshering, the practice of covering meat in coarse salt to draw out blood, a job the big surface-heavy crystals do well. The two dominant US kosher brands behave very differently: Diamond Crystal is a hollow, light flake, while Morton is denser and rolled flatter. Sea salt ranges from fine to coarse and retains a whisper of other minerals; flaky finishing salts like Maldon are prized for their crunchy pyramid flakes sprinkled on at the end. Curing saltsPrague Powder #1 and #2 — are a special category: table salt blended with sodium nitrite (and nitrate, in #2) for making bacon, sausage, and salami. And pink Himalayan salt is simply rock salt tinted by trace iron oxide; its famous “84 minerals” are real but present in such tiny amounts that any nutritional benefit is negligible — you’d need dozens of teaspoons a day to matter, a fatal dose of sodium first.

How it’s used today

Salt seasons in layers: a little in the pasta water, more in the sauce, a final pinch of flaky salt on top. The professional habit is to taste and adjust rather than dump in a measured amount, because — critically — volume measurements don’t transfer between brands. By weight, a teaspoon of fine table salt is about 6 grams, Morton kosher about 4.8 grams, and Diamond Crystal kosher only about 2.8 grams — so a tablespoon of Diamond Crystal is roughly half as salty as the same tablespoon of Morton, and table salt is saltier still. Swapping brands without adjusting is one of the most common ways home cooks ruin a recipe: measure a Morton amount in Diamond Crystal and it’s under-seasoned; do the reverse and it’s inedible. The fix the pros use is simple — weigh your salt, or pick one brand and learn it. The rough conversion by volume is 1 part table salt ≈ 1¼ parts Morton kosher ≈ 2 parts Diamond Crystal. Beyond seasoning, salt brines poultry, cures meat and fish, koshers, preserves pickles and kraut, and — a favorite baker’s trick — a pinch sharpens sweetness in caramel, cookies, and chocolate.

Make your own

You can absolutely make salt at home, and it’s a satisfying weekend project: take clean seawater (or dissolve unrefined salt in water), filter it, and simmer it down until crystals form, then let the last of the water evaporate gently — a low oven or a sunny windowsill grows the prettiest flakes. What you get is essentially a small-batch finishing salt, and the flake shape you coax out depends on how slowly it dries. What you cannot safely make at home is curing saltnever try to mix your own Prague Powder. Sodium nitrite is toxic in the quantities you’d be handling, the commercial blends are deliberately dyed pink so you can’t confuse them with table salt, and getting the 6.25% dilution even slightly wrong turns a preservative into a poison. Buy curing salt already blended, measure it by weight, and follow a tested cure ratio to the gram.

Substitutes (if absolutely necessary)

  • Any other salt, by WEIGHT — the real “substitution” problem is swapping brands. Weigh it and table salt, Morton, and Diamond Crystal are interchangeable; by volume they are not. Rough volume rule: 1 tsp table salt ≈ 1¼ tsp Morton kosher ≈ 2 tsp Diamond Crystal.
  • Do NOT substitute curing salt for table salt (or the reverse)Prague Powder #1/#2 contain sodium nitrite and are toxic used as ordinary salt; that’s why they’re dyed pink. Table salt also cannot cure meat safely. These are not interchangeable in either direction.
  • Flaky finishing salt like Maldon is for the top of a dish, not the pot — its crunch is the whole point and it dissolves (and disappears) if stirred in early.
  • Low-sodium “salt” (potassium chloride blends) can stand in for health reasons but tastes faintly metallic or bitter and behaves differently in baking and curing.

Where to find it

  • Local store: table salt and Morton kosher are in every grocery baking aisle; Diamond Crystal kosher, Maldon, and sea salts are increasingly common but check the cooking/gourmet section.
  • Curing salt: Prague Powder #1 and #2 are sold by butcher-supply and sausage-making retailers and online (Amazon, The Sausage Maker, LEM) — buy it pre-blended, never mix your own.
  • Make your own: finishing-flake salt is an easy evaporate-seawater project; curing salt is not — that one you must buy.
